Don't really have a team as long as Los Angeles doesn't have one. I'll probably go for anyone who moves here so long as it isn't the Chargers or Raiders.
The Packers are the team to beat.

Packers have a target on their back now, so we'll see how they handle that.
They're the "team to beat" in the sense that they're the champs, but they're no longer the best in the NFC.

They still are the team to beat, the Eagles might have improved a lot, but they also traded a decent backup and Vick is almost guaranteed to get injured, and even if he doesn't any decent running team will kill them.

Just because they're the champs doesn't mean they're the best team. Even with Grant and Finley returning.
Vince Young is still a winner over the course of his career, and being in that system can only help him.
I doubt that just any running team will kill them. They've built a defense that basically tells opposing teams, "run at us, because you damn sure aren't throwing it on us". So they'll be prepared for the run.

Even with the defense Philly has built, GB's is still all around better. With all the hype that Desean Jackson gets, he's mostly a kr/pr and doesn't get that many receptions. And Vince Young may be a winner over the course of his career, but no one wants him as a starter. The 49ers signed Alex Smith again, and other teams that needed QBs chose not to get Young. He can't handle the pressure.
Also the Eagles are most likely getting rid of Samuels, and Cromartie is a good cb, but Nnamdi shut down half of the field in Oakland and look where that got them. Teams with great qbs like GB, NO, and possibly Atl will still do what they want on that defense.

Got anything to prove that assertion? Otherwise it sounds like little more than homer-speak.
Comparing Philly to Oakland is way off-base as well. Just because Asomugha didn't find "success" in Oakland doesn't mean the same thing will happen now. He'll have a much better team around him.
And as far as "great" QB's go, I'll give you Brees, but Rodgers and Ryan still have more to prove.
DeSean Jackson isn't overhyped either. I'll agree that 47 receptions is too few for a guy with his talent, but he did average 22.5 YPC (best in the league in 2010). And it's hardly his fault that Vick/Kolb had so many targets, just like Rodgers has his bevy of lesser-known guys.

EAGLES!!!!! We will see how all these new players will do once the season starts, but you have to give it Philly for going all out this year.
