I'm a few weeks away from purchasing a Canon Rebel Xt (8mp) Digital SLR.
I've read from numerous enthusiates and professionals to just buy the body and ditch the stock lense. My question to you guys is what lense would you recommend for photoshoots with models?

I would recommend a 100mm fixed focal length lens. I don't take as many pictures as I used to, so I'm not familiar with the latest photographic equipment available (especially for Canon - I use Nikon), but in general, a 100mm lens is good for portraiture, and fixed focal length lenses generally give a wider aperture range than zoom lenses.
Also, check out B&H at www.bhphotovideo.com. They have a ginormous selection photo equipment (and A/V equipment) and almost unbeatable prices.
Finally, if you're planning on taking snapshots or other pictures besides portraits, I would recommend getting a body/lens package. The zoom lenses in the packages are very versatile for everyday shooting, don't cost much extra, and take reasonably good photos.
